Oreo Poke Cake

Of course I found the idea of Oreo Poke Cake on Pinterest. (Where else?!) I ran to the local grocery store to get the simple ingredients. (Chocolate cake mix and oreo pudding mix.) Well, who would’ve thought that our little grocery store DIDN’T HAVE OREO PUDDING??!! So I grabbed what I felt would be a worthy (and possibly better?) substitute – No Bake Oreo Dessert!!

Another Pinterest idea is using one can of soda instead of the usual water, oil, and eggs for the cake mix. I know, I know…it’s Oreo Poke Cake so is saving a few calories and grams of fat worth it? Maybe. Maybe not. I certainly didn’t make any weight loss resolutions this year but I’m lazy today and this is really simple so I thought I’d try it. You may recall I made the Easiest Cake Ever awhile back using a similar method with a can of pumpkin instead of soda.

The soda makes the mix really fluffy. I did try a bite (or two) purely so I could tell you what it tasted like. It was a little fizzy, but that would not stop me from eating spoonfuls of the mix right out of the bowl, especially since there’s no raw eggs – bonus! Simply mix the soda and cake mix then pour in your pan. Bake as directed.

Another thing I love, love, LOVE is using Baker’s Joy to spray the pan. It’s WAY better than regular cooking spray in my opinion.

Right from the oven you’d never know I used soda, it looks perfect!

Then poke with a wooden spoon.

Let it sit while you mix the no-bake mix filling. (I didn’t use the crumb crust pouch…maybe for another recipe sometime?)

Spread the filling over the top of the cake. It’s pretty thick so I don’t know that any of it actually fell into the poke holes but keep in mind this concept was meant for actual pudding mix.

Sprinkle the Oreo crumble topping on top and you’re done! To help cool the cake and let the no-bake dessert mix set up I put it in the cooling drawer in the refrigerator. Seriously, the hardest part about this recipe is letting it sit and cool instead of devouring it immediately.
