Juicing Pulp Cake

I finally got around to opening the juicer I bought months ago and gave it a whirl. I think I like it! The first day I juiced a couple handfuls of baby carrots, pineapple wedges and an apple. The next day I tried baby carrots, cucumber, spinach, grapefruit and an apple. (Kind of a weird combo, huh?!)

When I was done juicing I had maybe 1.5-2 cups of leftover pulp and I wasn’t sure what to do with it…it seemed so wasteful to just throw it out. I stuck it in the freezer and poked around online for ideas. I found the “Funky Juicer Pulp Cake” recipe and tried that today. Despite the odd combo of pulp ingredients I was happily surprised to find I liked it! I will definitely be using this recipe in the future.

Juice Pulp Cake

It came out like a dense spice cake. I think it would work well as muffins or in a loaf too.
