I don’t mind most vegetables but I have never eaten enough on a regular basis, especially raw, which is supposed to be the most nutritious form. Don’t even get me started on raw broccoli…I distinctly remember a time at the grocery store when I was little when I was given a piece of raw broccoli to sample some dip. I tried it. Walked away nearly vomited. Seriously. I love cooked or steamed broccoli, even plain but I want nothing to do with raw broccoli.
Until now.
Over Thanksgiving this year I went against my better judgement and tried a veggie salad that had raw broccoli and cauliflower (another veggie at the bottom of my list). I discovered I LOVED this salad. On a whim last night I ran to the store and tried to re-create this recipe. I forgot the cauliflower and added feta cheese but you can pretty much come up with ingredients that suit your tastes.
Suggested Ingredients:
1 Cucumber
Small Package of Cherry Tomatoes
Small Stalk of Broccoli
Small Can of Sliced Black Olives
2 Handfuls of Green Olives
2 Handfuls of Shredded Cheese
Small Container of Feta Cheese
Creamy Italian Dressing (use as much or little as you like)
This is kind of a throw together recipe (i.e. EASY!) so I didn’t measure anything. Simply chop the veggies, toss everything in a bowl and pour in the dressing.
It really doesn’t take a lot of dressing (which I think is key for me to eat the broccoli!) so start with a little and add as you feel necessary. Mix well. Chill in refrigerator.
I could eat this stuff all day. Seriously. Probably not a bad idea either, except I accidentally poured a little too much dressing. I love it, but it’s not low-fat so that prevents me from calling this a “healthy” recipe. But it can’t be all that bad, right?!
