Cookie Monster & Elmo Cupcakes

Last year we went all out and had a huge rainbow theme bash for my daughter’s 1st birthday. It was fun and we had A LOT of people attend. Since then we have moved to a very small town that is 1-2 hours away from the majority of our friends and family. This year for her 2nd birthday we decided to celebrate with just family so we will have 3 mini-celebrations instead.

I love throwing a big theme party but decided to hold off and do that again maybe when she’s in school and has more friends to enjoy all the work that goes into such event. I still wanted her to have fun and enjoy her birthday cake, or, in the case of her first celebration – cupcakes. =)

I originally planned to make a few Cookie Monster & Elmo cupcakes decorated with frosting using a star tip. Then I watched a couple videos on other methods and thought about doing them this way:

But I really liked the look of using coconut (of course I cannot remember the video link to that method!) and knew this would be much faster than my original plan so this is what I ended up with:

Wait…something looks wrong, does it not? Oh yeah…Cookie Monster NEEDS COOKIES. Yeah. That’s what I told my husband when I caught him drooling over the bag of Chips Ahoy. I only need a few, I told him, so don’t eat the whole bag. But guess what he did? He waited until the day before and polished off Every. Last. Cookie. =( So, guess who had to run to the store the bright and early the next morning so I could finish my cupcakes?!

Much better!

I was excited to learn about and try marshmallow fondant for Elmo’s nose. It was super easy to make and work with and could be used for a TON of things, including edible play dough!

The cupcakes weren’t my greatest masterpieces but Miss Kayden seemed to enjoy them.

Mostly she enjoyed picking off the chocolate chips and eating those.

One celebration down, two to go!
