Mmmmm….muffins…with chocolate chips….not only are they tasty, but they are pretty darn healthy too!
Whilst browsing Pinterest, as I so often do, I found a recipe for Banana Oatmeal Cups. I was looking for something quick and easy to make for breakfast that my toddler might like. Plus, since we tend to have a lot of over ripe bananas on a regular basis I thought this would be perfect.
I adapted the original recipe a bit, adding coconut flakes & ground flaxseed. I realized this recipe is the perfect base for a lot of healthy muffin combos.
What you need to make the “base mix”:
- 3 ripe mashed bananas
- 3 cups rolled oats
- 1 cup vanilla almond milk (my favorite!)
- 2 eggs
- 1 TBSP baking powder
- 1 TSP vanilla
Then you can add all sorts of things to appeal to your family’s individual tastes:
- Chocolate chips
- Dried cranberries
- Chopped pecans or walnuts
- Blueberries
- Diced peaches
- Diced apples & cinnamon
- Diced strawberries
- Flaxseed
- Coconut flakes (I use unsweetened)
Directions:
- Preheat oven to 375 degrees
- Mix ingredients
- Spray muffin tins with cooking spray
- Scoop mix into muffin tins – I used my Pampered Chef muffin scooper, which was perfect. I got about 20 muffins
- Bake for 15-20 minutes until the muffins start to brown
I like the muffins just fine as they are, but I have a terrible sweet tooth and thought they would be even more delicious with some Stevia or honey. Of course, that adds more calories…if you’re counting. My big girl picked out the chocolate chips and ate them, leaving the oatmeal behind. LOL Maybe another time…?
So easy to make, pack in a lunch or grab on the go for a healthy breakfast. Or, if you’re staying at home make a quick batch of Breakfast Ice Cream to go with your muffins!
