As previously mentioned, my daughter is having three mini celebrations for her 2nd birthday instead of one big celebration which means I get to make three different types of cakes/cupcakes. =) We did Elmo & Cookie Monster cupcakes for the first celebration, and then I decided on a chocolate & peanut butter barrel cake for the second.
It was delicious! I’ve had a few people ask for the recipe and it’s super easy, really.
I just used a boxed chocolate cake, 12-14 regular size Kit Kat bars (snack size is too small), a big bag of Reece’s Pieces and this recipe for the peanut butter cream icing:
1/2 Cup Butter (unsalted, softened)
1 Cup Creamy PB
2 Cups Powdered Sugar
2-3 Tbsp milk if needed (I didn’t use any)
Bake cake in (2) 8″ round pans, let cool completely. (Tip: Spray pans with Baker’s Joy for easy release – LOVE this stuff!) Level tops with serrated knife. Whip butter & PB, add powdered sugar slowly. Ice cake, add Kit Kats (2 bar sections) all around, tie with ribbon. Pour candy on top.
This is a fun cake to do with a million different combinations of cake, icing & candy so you can adjust for any color, theme or event!
A coworker made this for a bake sale and it was a hit. The peanut butter frosting sounds delish.
It is, and it’s super easy to make which makes it all that more dangerous to the diet!
